Walk into most bakeries and the pistachio anything is bright green. That color doesn't come from pistachios, pistachios are pale, oily, and a little gray-green at best.
We grind ours fresh and fold them into pastry cream. The color is honest. The flavor is roasted and a little savory. Topped with a clean fondant so the nut does all the talking.
