Eclairs French Cafe and Bakery Pistachio Éclair: The One We're Quietly Proud Of

Walk into most bakeries and the pistachio anything is bright green. That color doesn't come from pistachios, pistachios are pale, oily, and a little gray-green at best.

We grind ours fresh and fold them into pastry cream. The color is honest. The flavor is roasted and a little savory. Topped with a clean fondant so the nut does all the talking.

It's the éclair our regulars order to test new customers. If you order pistachio first, we know you're serious.
