Ask any of us at Éclair which flavor we'd take home, and the raspberry comes up first. It's bright, it's a little tart, it's gorgeous on the plate, and it earns its place next to the classic.

The trick is real fruit. The pastry cream is folded with fresh raspberries, not flavoring. The fondant on top is tinted by reduction, not coloring. The dark chocolate tiles cut the sweetness so the berry stays the loudest voice on the plate.

If you're ordering for a tray, mix raspberry and classic, they look beautiful together and they balance the table.
