We took everything we love about a key lime pie, the pucker, the cream, the graham crust, and rebuilt it as an éclair.

The pastry cream is sharp with real key lime. The top gets a swoop of whipped cream and a dust of crumbled graham, which gives the whole thing a little salt-and-crunch finish.
