Éclair 101
2.5 hoursChoux from scratch, classic vanilla pastry cream, dark chocolate ganache. You leave with a half-dozen éclairs you piped yourself.

Tart Workshop
3 hoursButtery sablé crust, real lemon curd, and a fresh fruit tart you decorate from the season's basket.

Flavored Éclairs
3 hoursBeyond the classic, raspberry, pistachio, blueberry lavender. Pastry cream variations and finishing technique.
