Everyone has a Nutella memory. Ours starts with folding it into pastry cream until the whole batch turns the color of a chestnut, then topping the éclair with a thick ganache and a scatter of chopped hazelnuts.

It's nostalgic without being childish. Rich without being heavy. And it's the éclair that converts skeptics, the ones who think they don't 'like French pastry', every single time.
